Easter Lamb with a Sicilian Twist

We’re back! And we can’t believe it is already March, with Easter just a few short weeks away. This Easter, Carine is going to be heading to the wonderful island of Sicily so it was only right that this month’s recipe reflected that, albeit with a bit of a twist.


Sicilians take Easter very seriously. Not only is it a solemn and ritual-laden time, but it is also the beginning of Spring which means lots of lovely things to eat after the long, hard winter. In an area which has been invaded and inhabited by a great many peoples, Easter is a time when the leftovers of these cultures intersect, pagan rituals meeting Catholic processions. 

And the star of this week’s dish – Lamb – is common to both! The pagans would sacrifice a lamb to welcome the Spring, and before the flight from Egypt, Moses advised Jewish families also to sacrifice a lamb, smearing the blood over their doors and eating the meat with unleavened bread. But, as well as being symbolic, it is delicious and never more so than in this month’s mouth-watering dish – lamb shank osso bucco.


Although traditionally a Milanese dish made with veal shanks, Osso Bucco has become a favourite dish the world over and, like most of our favourite dishes, has been reinvented and reimagined many, many times. In this recipe we are substituting the veal with Easter lamb and serving it with delicious baked aubergines – so let’s get started!



Ingredients

(Serves 4)

4 Lamb shanks
sea salt and pepper
1 tbsp fresh rosemary, chopped
2 tbsp all-purpose flour
1 tbsp olive oil
1/3 of Small glass of white balsamic vinegar
1 glass white vine
2 tins chopped tomatoes
2 tbsp tomato puree
Sunflower oil
1 vegetable stock cube.

For the soffrito

1 large Carrot
1 Celery Stalk
3 small onions
3 Garlic cloves
Zest of 1 lemon
3 Bay leaves
100ml Olive oil


Method

  • Preheat the oven to 180C (Fan)/ Gas Mark4.
  • Peel the carrot, onions, and garlic and finely chop, along with the celery, for your soffrito
  • Add these to an ovenproof casserole dish along with the bay leaves, lemon zest, and olive oil.
  • Pop this on the hob and fry for 20-30 minutes on a low to medium heat, stirring every 5 minutes or so to make sure it does not burn or stick
  • Season both sides of your lamb shank with sea salt and freshly-ground black pepper then lightly coat them in all-purpose, plain flour.
  • Heat the sunflower oil in a large frying pan over a medium heat and, once hot, brown your lamb shanks all together until they reach a deep brown colour.
  • Once all shanks are brown on both sides, remove from the pan and set aside.
  • Add the tomato purée to your soffrito and cook for a further 10 minutes over a low-to medium heat.
  • Add the vinegar, white wine, and stock cube and let it reduce for 5 minutes on a high heat. 
  • Add your shanks to the pan, along with chopped rosemary, sea salt and pepper to taste and put the casserole dish, uncovered, into the oven for at least 2-3 hours.
  • Be sure to check on your dish every 30-45 minutes, if it begins to run out of juice, add half a cup of water.

Once cooked, your Osso Bucco sauce should look a bit dry but the meat will be meltingly tender.


Baked Aubergines

Ingredients

3 aubergines
50g Parmesan
Handful flat-leaf parsley
1 large clove garlic
2 slices of wholemeal bread
100 ml Olive oil
1 medium glass water
Salt & Pepper to taste


Method

  • Start by mixing the bread, parmesan, garlic and parsley in your food processor until you reach a crumbly texture, then set aside.
  • Slice your aubergines into thick rounds.
  • Then it is simply a case of layering the two up – one layer of aubergine, then olive oil, salt and pepper, then a sprinkling of the breadcrumbs.
  • Repeat until you run out of aubergine.
  • Add the water and top up with the remaining breadcrumb mix, keeping back just a little as a garnish.
  • Bake for 30-45 min at 180C (Fan) or until cooked.

 


Serve with your Osso Bucco, the last sprinkle of your breadcrumbs and a dash of good finishing olive oil.

Try Dining in the Dark this Valentine's Day!


We’re bringing new meaning to the term “Blind Date”. That’s right, Matango supper club is back and this month we are dining in the dark for an extra-special, totally quirky Valentine’s Day.


For a few hours on February 13th we will be taking away your sight (and hopefully your inhibitions) and giving you a blindfold and six delicious courses in return. From starter to fish course to dessert, each dish will be one taste explosion after the next as your other nonvisual senses are heightened.

The concept of dining in the dark has been around since 1999, when blind clergyman Jorge Spielmann opened restaurant Blindekuh in Zurich. The idea came to Spielmann after he had friends over for dinner. To share the sensation of being blind with them he had suggested everyone wear blindfolds and, to everyone’s surprise, they had reported actually enjoying their food more when their sight was taken away.


One of the best things about dining blind – besides the enhanced deliciousness – is that no one can see you either. It is perfect for a date and fear not! The blindfolds will come off for dessert, so all that time spent on your hair won’t be for nothing! We’ll even be giving you different desserts so you can get a little close by trying each other’s.

But it’s also perfect if you’re not bringing a date – come with old friends or fly solo and meet some new ones, nothing is bound to take away shyness than a group of people, eating delicious food, and occasionally missing their mouths.

We will be filming the whole thing and taking pictures, so you can take some memories away at the end of it, and you don’t need to worry about missing out on fuel for your Instagram – you enjoy eating the food, and we’ll snap the photos.


The menu is a closely-guarded secret, but for those of you with dietary requirements – don’t worry! We want everyone to have a good time, so get in touch when you book to let us know, and we’ll make sure to sort something delectable out for you.


We open at 7pm and dinner will start at 7:30 – but please arrive before 7:20 to get your bearings and receive your blindfold. Get Festive, French-style.


Although her gastronomic roots are firmly planted in Cameroon, Carine spent much of her life in the culinary capital of the world: France. Renowned for its unparalleled ingredients, and world-famous cooking techniques, we thought it was about time we paid homage to France through a festive supper club, chez Carine.



To celebrate that wonderful country and this most joyous time of year, Carine will be hosting “A Very French Christmas” on the 4th and 18th of December, for a limited number of selected guests, in her warm and inviting home in Brixton. This 6-course menu will showcase some of the greatest French dishes and the most delicious French produce and is bound to get you in a Yuletide mood.

The theme will be all things French – so dig out your favourite beret and come in your finest Breton stripes. It is the season of giving, so we are asking you to bring a small gift, costing no more than £5, to do Secret Santa with the other guests at the party. We will also be giving some gifts in return, with every guest receiving a goodie bag, along with their swapped Secret Santa gift.

So you think you know BBQ...


Just over a week to go until Matango’s fabulous event Le Grill takes place in Whitechapel on Thursday 19th November!

This is not your average BBQ, ladies and gentlemen, this is a BBQ inspired by Carine’s Cameroonian heritage, and the food she loves to eat. There will be a taste of the tropical, deliciously smoky meat, fish, and vegetables and - most importantly - Carine’s secret marinade, from her line of sauces Marie’s Little Jar.



This week, Carine has been working with the guys at Far Out Food – trialling, testing, and tasting in order to come up with the best menu possible, and you can get an idea of what that looks like on our YouTube channel HERE.


Just in case you missed last week’s post, we’ll remind you that at Le Grill we will be holding a competition to find a name for Carine’s delicious secret marinade “The Green Jar”. Whoever wins will receive a special prize and the pride of seeing their chosen name on hundreds of jars of this unique and wonderful sauce.



We’re still keeping the food a surprise for you all, but just for an idea, you might tuck into –

Introducing...Le Grill!


In two weeks’ time, Matango will be hosting another exciting supper club, and this time it’s Le Grill. This is a barbecue like you have never experienced before, complete with exciting new ingredients and Carine’s special secret marinade from her own line of sauces Marie’s Little Jar.



We don’t know what it is, but somewhere back in history it was decided that barbecuing was a man’s job. This rule held true in Carine’s household – with her lovingly preparing the meat, marinating it, tenderising it…only to see it be manhandled when it came to the cooking. So she decided to take matters into her own hands, and has become the BBQ Queen!




While honing her grilling skills, she came up with what she believes to be the perfect marinade for barbecued meat, her secret weapon, currently known only as “The Green Jar”. And that is where you come in – by coming to the supper club, not only will you have the opportunity to taste this delicious, unique sauce, but you will also have a shot at giving it a name! The person who comes up with the best name will win a prize, and the lifelong glory of having named this fabulous product.


So what can you expect at Le Grill?

Farm hand-picked fresh greens tossed in a fruity vinaigrette.

A whole grilled fish to share.

1/4 of a juicy chicken to work on served with sweet potatoes fries

Try a True Taste of Africa!


Exciting news, ladies and gentlemen, if you can’t make it to tomorrow night's Matango: A True Taste of Africa supper club, we will be holding another one in just two weeks’ time, on November 12th. Each of Carine’s Matango supper clubs explores the culture of a different country, and this one will provide a way for Carine to share the food of her homeland, Cameroon, with you.

Come prepared for some tastes and smells you have never before encountered as Carine often makes dishes and uses ingredients you may never even have heard of. In the past, she has served Ndole, Miondo or Poisson braisé, authentic Cameroonian dishes which have been handed down from generation to generation. Carine might be cooking with exciting ingredients such as Cocoyams and Mbu – and if you don’t know what those taste like… well you better buy a ticket and come taste them for yourself!


Sample Menu

Street-food style appetiser of Banana and Cassava beignet with a choice of chilli dip or Carine’s secret green sauce from Marie’s Little Jar.

Starter of Avocado and Prawn salad, in honour of Cameroon’s name*.

The fish course will be a white fish, steamed in banana leaves with Carine’s special spice blend, served with cassava fries.

The meat course will be Smoked chicken in peanut sauce, served with fragrant rice.

There will be a palate cleanser to make way for dessert!

Dessert will be spiced, roasted banana, served in a spicy syrup, with mango sorbet.

Finally, there will be Coffee and caramelised coconut balls.

You will also take away a homemade goodie bag, filled with some of the things you have tried this evening.




*Cameroon was originally colonised by the Portuguese, who arrived in 1472. Upon arriving they noticed the abundance of prawn and shrimp who lived in the country’s Wouri River. Because of this, they named the territory Rio dos Camarões (“River of Prawns”), and it has been called ‘Cameroon’ ever since!


There will be flavours and ingredients like you have never tasted before, so come hungry and free of expectations and we can guarantee you a warm and wonderful evening.

What is Matango?


What is Matango?


Mantango is a palm wine, made from the sap of many different palm trees – including the date palm and the coconut palm. In the communities where it is produced it is a key source of income and is served only on very special occasions. Serving matango is a way for Cameroonians to say “Welcome, you are our esteemed guest and we are honoured to be in your presence”, which is just what Carine aims to do in her supper club.


Next week, on Thursday 29th October, Matango’s theme will be A True Taste of Africa and will see Carine cook an array of dishes inspired by the food she grew up with. Carine wants to surprise you, so the menu is a secret, but we can give you a sneak peek of what to expect here.
